These fires start innocently enough when a little water gets under the grease, heats up, vaporizes, bursts, goes onto a burner, splatters back into the pan and ignites. Most people don’t know what to do when that kind of fire starts, so I’m going to show you. I am putting some vegetable oil in a pan, the best thing you can do is cover it with a lid. Leave the pan lid on, turn off all the burners, and wait at least 3 minutes until everything cools down. If you don’t wait the hot oil or grease will re-ignite. Many times people don’t have the pan’s lid at their fingertips, so what do they do? They do the worst thing possible, they put water on it. I’m going to put about a quarter cup of water on this grease fire, watch what happens. DON’T PUT WATER ON A GREASE FIRE. I am going to use a kitchen fire blanket to smother the flames. Leave the blanket on for at least 3 minutes, turn all the burners off and wait until everything cools down. This kitchen fire blanket is NOT the same as a wet towel or a dish rag.
